A GSX-S750 has enough performance to be worth taking to a circuit and little enough value to make a crash survivable financially. That is a specific and useful place in the market, and it is why these get converted by riders doing their first serious preparation rather than by experienced racers.
Doing It Properly the First Time
If this is a first conversion, the temptation is to bridge the connector with wire and move on. It works, and it fails later — usually through corrosion at the lowest point of the bike, and usually without warning. A moulded plug costs a little more and removes that from the list of things that can go wrong at an event.
