Picking the size
Here the size is a thickness, not a head size. A thicker pad fills more space between shell and face and holds the helmet tighter; a thinner pad gives more room. Shark's list does not say which thickness comes fitted to which helmet size, so the best starting point is the pad you are replacing. If your current pads have packed down and the helmet now moves, the same thickness new will usually restore the original fit. If they were always too tight or too loose, step one thickness up or down: 20, 25, 27, 30 mm.
